When you’re out camping or at a music festival, it can be tricky to eat well and have everything you want at hand. Beyond broth packs all organic sweet potato, beet, carrot, broccoli, spinach, garlic, celery seed, parsley, sea salt & black pepper, plus herbs and spices to promote wellness. For this month, I’d like to offer a summery and light recipe using the delicious broth. Let’s make it easy to stay healthy!
1 can coconut milk
1 green onion
2 tbsp chopped parsley
2 tbsp chopped basil
2 packets Immune Broth
1 tsp nutritional yeast
Pinch of salt and pepper to taste
Bring coconut milk to a simmer, add in 2 packets of Immune broth, and stir. Mix in onion, herbs, nutritional yeast, salt and pepper. Add water to thin out soup if it’s too thick. Let cool, and add in avocado. Enjoy, warm or chilled!
